Heart Smart Healthy Exchange Cookbook pg. 63. Chicken Pot Soup was the easiest recipe yet! Vince and I both thought it needed a little salt though so we added a very little sea salt and it was great. I also used frozen peas instead of canned to get that authentic chicken pot pie texture. It turned out great. Vince said it tasted just like chicken pot pie. I served it with crescent rolls to simulate that chicken pot pie crust, and they went with the soup fantastically well. 5 stars!

If you like sweet potatoes, but don't want to use your starch windows up on them, try this. This wasn't exactly like sweet potatoes, but for so low of calories it was a good substitute. I did add a little salt and parkay butter spray, and a little Walden Farms zero calorie pancake syrup on top just to make it over the top good. But, it was delicious as is too! All 5 stars!
